I missed last week’s Meal Planning Monday due to the husband being home from work all week (NOT a good thing — he was home due to not being able to work in the weather/rain). I need to get on top of scheduling my posts ahead of time so I can make sure they get done no matter what.
Monday: Chicken Thighs, Scalloped Potatoes, & Veggies*
Tuesday: Beef stir-fry.
Wednesday: Pork Chops & Veggies*
Thursday: Spaghetti & Meatballs.
Friday: Something fun — maybe pizza?
Saturday: Tuna Casserole.
Sunday: Leftovers – if there are any. If not, something easy! 😉
(*we always have lots of bags of frozen veggies on hand, especially during the winter when fresh fruits and vegetables are much more expensive. Usually I just grab a bag from the freezer, and whatever it happens to be, that’s what we make!)
My meals have been pretty boring lately. Maybe I’ll spend some time this week looking up some new recipes. I’d like to find some new crockpot recipes, too, for the upcoming weeks.
We just went grocery shopping, but had to do a smaller “shop” thanks to lack of funds. So meals this week may not be super exciting, but they work well enough. 😉
Also, Christmas is just around the corner. Has everyone started planning their Christmas meals? I’m starting to think about/start planning out mine this week.
