I’ve just recently started meal planning. So far, I really like it.
Every Monday (whenever I get the chance — in the morning, or the afternoon before dinner), I sit down at the table and print out my meal planning chart — Giving credit where credit is due, I found this particular chart on www.theprojectgirl.com. I spent quite some time searching and “googling” and looking for a chart that really met my needs. This one is so perfect for me, that I couldn’t have made it better myself.

The great thing about this particular chart I found is that it’s a whole page split in half. One half is labeled day by day — only one slot for each day. I find a lot of meal charts are broken down by breakfast, lunch, and dinner. And well, I just don’t have time to plan out THREE meals a day. But I DO plan out dinners. Then on the other part of the page, there’s a broken down “grocery list”. I REALLY like having them together on one page. We don’t do our grocery shopping every week, so whether we go every 2nd or 3rd week — I need to have a running list to be able to mark stuff down either as we run out, or as I think of a new recipe and find there’s an ingredient I don’t have. The grocery list is broken down into categories — meats, dairy, frozen, canned, dry, snacks, etc.
So, here’s what I do. On Monday, I take my planner and go into the kitchen. I take a look in the fridge, freezer, cabinets, and pantry closet. Then, I try to come up with meals using what I ALREADY have. That way I don’t have to plan a shopping trip to complete my plan. And as the week goes by, as I come up with new ideas for the following week or if we run out of something, I write it down on the grocery list, so I will have that stuff for my next meal plan.
Since I haven’t done this week’s meal plan yet, I’ll post my meals from last week.
Monday: Baked Pork Chops, with Cajun Red Beans & Rice.
Wednesday: Cream of Chicken Breast, with ziti, cauliflower, & homemade rolls.
Thursday: Spaghetti & Meatballs
Saturday: Take Out Night (?)
Sunday: Baked Chicken Thighs, with Scalloped Potatoes and Veggies.
