Recent Recipes.

I have been going crazy cooking and baking and trying out new recipes. Most of them are not all that complicated, so I thought I’d share.

Usually when I make something new or fun — or something that comes out really well — I post about it on Facebook or wherever. I even had a friend ask me, “Where do you find all of the time for that?!”

Finding time is easy when you really enjoy doing it. But I have to admit, it’s getting harder, at just about 26 weeks pregnant, to find time for cooking 3 meals a day, plus baking in between, and chasing my toddler all over the place, AND keeping the house clean. But it can be done.

Monday Meal Planning (Thanksgiving Edition).

My hopes are to post this every Monday morning for the following week. Since I posted my “mealplanning” entry already, but with last week’s meals, I’ll get caught up by posting the meals I just planned for this upcoming (Holiday) week. Then from there I can continue on posting it Monday morning’s for the week.

Monday: Chicken Thighs with Scalloped Potatoes & Veggies
Tuesday: Steak & Onion Sandwiches with Steak Fries
Wednesday: Chicken Breast (most likely baked) with Spanish Rice & Veggies
Thursday: Thanksgiving (we’re not hosting — so no cooking!)
Friday: Leftovers (hopefully we’ll bring home Thanksgiving leftovers with us!)
Saturday: Steak & Scalloped Potato Salad
Sunday: Macaroni & Cheese with Veggies

That’s it for this week’s Meal Planning Monday! This hopefully will be a post that I’ll be posting every Monday! If you like the idea of Meal Planning Monday’s, link up with me in your blog — and leave me a comment if you do! If you see something that you like and would like a recipe, leave a comment, or you can find my email under the contact page.

Meal Planning Mondays.

I’ve just recently started meal planning. So far, I really like it.

Every Monday (whenever I get the chance — in the morning, or the afternoon before dinner), I sit down at the table and print out my meal planning chart — Giving credit where credit is due, I found this particular chart on www.theprojectgirl.com. I spent quite some time searching and “googling” and looking for a chart that really met my needs. This one is so perfect for me, that I couldn’t have made it better myself.

The great thing about this particular chart I found is that it’s a whole page split in half. One half is labeled day by day — only one slot for each day. I find a lot of meal charts are broken down by breakfast, lunch, and dinner. And well, I just don’t have time to plan out THREE meals a day. But I DO plan out dinners. Then on the other part of the page, there’s a broken down “grocery list”. I REALLY like having them together on one page. We don’t do our grocery shopping every week, so whether we go every 2nd or 3rd week — I need to have a running list to be able to mark stuff down either as we run out, or as I think of a new recipe and find there’s an ingredient I don’t have. The grocery list is broken down into categories — meats, dairy, frozen, canned, dry, snacks, etc.

So, here’s what I do. On Monday, I take my planner and go into the kitchen. I take a look in the fridge, freezer, cabinets, and pantry closet. Then, I try to come up with meals using what I ALREADY have. That way I don’t have to plan a shopping trip to complete my plan. And as the week goes by, as I come up with new ideas for the following week or if we run out of something, I write it down on the grocery list, so I will have that stuff for my next meal plan.

Since I haven’t done this week’s meal plan yet, I’ll post my meals from last week.

Monday:  Baked Pork Chops, with Cajun Red Beans & Rice.
Tuesday: Chili
Wednesday: Cream of Chicken Breast, with ziti, cauliflower, & homemade rolls.
Thursday: Spaghetti & Meatballs
Friday: Leftovers
Saturday: Take Out Night (?)
Sunday: Baked Chicken Thighs, with Scalloped Potatoes and Veggies.

That’s it for this week’s Meal Planning Monday! This hopefully will be a post that I’ll be posting every Monday!
